A.      JOB SUMMARY

 

Reporting to the Director, the Restaurant Manager shall be responsible for ensuring smooth functioning operations of the restaurant by ensuring all agreed targets are met .

 

B.      OVERALL MANAGERIAL RESPONSIBILITIES

 

a)      To ensure financial (revenue and expenditure)  targets are met

 

b)      To ensure high level of customer satisfaction

 

c)       To ensure efficiency and effectiveness in all operations

 

d)      To ensure the restaurant has adequate competent and well performing staff at all times

 

e)      To advice the director on continuous improvement of the restaurant

 

f)       To promote and protect the Restaurant Brand image

 

 

 

C.      OPERATIONAL RESPONSIBILITIES

 

i.                     To develop standard operating procedures and ensure they are strictly adhered to

 

ii.                   To be responsible for the development of menu in line with food and beverage themes of the restaurant and target clientele.

 

iii.                  To be responsible for initiating, planning and organizing special events

 

iv.                 To ensure service standards for both food and beverages  are well defined and adhered to by all standards

 

v.                   To ensure high standards of food preparation and service in line with set menus and service standards

 

vi.                 Maintaining and exceeding customer satisfaction

 

vii.                To responsible for ensuring proper maintenance og equipment and building

 

 

 

D.      STAFF DUTIES

 

i.                     To ensure the restaurant has adequate well trained and well performing staff

ii.                     Setting & Maintaining high standards of staff conduct, reliability and professionalism

 

iii.                   Ensure proper duty allocation and work schedules  are in place at all times

 

 

 

A.      COMMERCIAL RESPONSIBILITIES

 

i.                     Support the director in marketing and promotion activities

 

ii.                   Ensure revenue targets are met

 

iii.                  Train staff on up selling and revenue ,maximization per available customer

 

iv.                 Put in place proper control procedure to ensure pilferage, theft and waste is kept to the minimum

 

B.      QUALIFICATIONS

 

i.                     At least a diploma in Hotel Management or related

 

ii.                   At least 5 years experience in hotel industry 2 of which should be as a restaurant manager in a rated establishment
